Arugula, Pear & Parmesan Salad
Peppery arugula with sweet ripe pear, shaved Parmesan, and a simple lemon dressing. Elegant and effortless.
Ingredients
- 100 g arugula (rocket)
- 1 ripe pear, thinly sliced
- 50 g Parmesan, shaved
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper
- Optional: walnuts or pine nuts
Method
- Arrange arugula on a plate. Top with pear slices and Parmesan shavings.
- Whisk olive oil and lemon juice with salt and pepper. Drizzle over the salad. Add nuts if using.
