Farro Salad with Tomatoes & Herbs
Nutty farro tossed with cherry tomatoes, cucumber, fresh herbs, and a bright lemon vinaigrette. Great for meal prep.
Ingredients
- 200 g farro
- 200 g cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- Fresh parsley and mint, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- Salt and pepper
Method
- Cook farro in salted boiling water for about 20 minutes until tender but chewy. Drain and cool.
- Toss farro with tomatoes, cucumber, onion, and herbs.
- Dress with olive oil, lemon juice, salt, and pepper. Serve at room temperature or cold.
