Classic Minestrone

A hearty vegetable and bean soup with pasta. Vary the vegetables with the season — the base stays the same.

Classic Minestrone

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 400 g canned tomatoes
  • 1.5 L stock
  • 200 g cannellini beans, drained
  • 100 g small pasta
  • Salt, pepper, oregano
  • Parmesan and basil to serve

Method

  1. Heat oil, sauté onion, carrot, celery 8 minutes. Add garlic, cook 1 minute.
  2. Add tomatoes and stock. Boil, then simmer 15 minutes. Add beans and pasta, cook 10 minutes.
  3. Season. Serve with Parmesan and basil.
