Pasta al Pomodoro
The simplest tomato pasta and maybe the best. Good San Marzano tomatoes, garlic, basil, and nothing else.
Ingredients
- 200 g spaghetti or penne
- 400 g canned San Marzano tomatoes
- 2 cloves garlic, lightly crushed
- Fresh basil leaves
- 3 tbsp olive oil
- Salt
- Pinch of sugar if needed
Method
- Heat olive oil, gently fry garlic until golden. Remove garlic.
- Add tomatoes, crush with a spoon. Simmer 15 minutes. Season with salt (and a pinch of sugar if sharp). Add basil.
- Cook pasta al dente. Toss with the sauce. Serve with a drizzle of olive oil.
