Pasta al Pomodoro

The simplest tomato pasta and maybe the best. Good San Marzano tomatoes, garlic, basil, and nothing else.

Pasta al Pomodoro

Ingredients

  • 200 g spaghetti or penne
  • 400 g canned San Marzano tomatoes
  • 2 cloves garlic, lightly crushed
  • Fresh basil leaves
  • 3 tbsp olive oil
  • Salt
  • Pinch of sugar if needed

Method

  1. Heat olive oil, gently fry garlic until golden. Remove garlic.
  2. Add tomatoes, crush with a spoon. Simmer 15 minutes. Season with salt (and a pinch of sugar if sharp). Add basil.
  3. Cook pasta al dente. Toss with the sauce. Serve with a drizzle of olive oil.
